Excellent question! Not all British Gold Sovereign coins feature the horse scene, but the classic and most common reverse (introduced with the 1817 Great Recoinage and used from 1817 onward) is Benedetto Pistrucci’s St. George and the Dragon, which shows St. George on horseback; the obverse carries the reigning monarch’s portrait. There are notable exceptions — pre-1817 sovereigns featured the Royal Coat of Arms, and commemorative sovereigns can have various alternative reverse designs.
